Low FODMAP Salsa

Just because you are low FODMAP doesn’t mean you should have to miss out on the strong delicious flavours of Mexican food. This salsa will be a fiesta for your taste buds and have you coming back for more AND keep your gut happy!

Ingredients
- 1/2 yellow capsicum, finely diced
- 2 large tomatoes, finely diced
- 4 slices jalapeño in brine or fresh (add more or less depending on heat tolerance), finely diced
- 1/4 cup chopped green tips spring onion, finely sliced
- 1/4 cup fresh coriander, chopped
- 1/4 cup fresh parsley, chopped
- 2 tsp The Friendly Food Co. Na’cho problem Spice Mix
- 1 lime, juiced
- Salt and pepper to taste
Method
- Add all ingredients to a bowl and mix together until well combined. Season to taste.
- Chill in the fridge for a minimum of 30 minutes prior to serving to all the flavours to develop.
- Serve with corn chips, tacos or burritos, scrambled tofu or any of your favourite Mexican dishes.
