This Low FODMAP Lazy Girl Creamy Cajun Salmon and Potato Bake is perfect for a no fuss, satisfying meal. With just a handful of ingredients and minimal effort, you can create a flavorful dish that’s gentle on the stomach. Tender salmon fillets and baby potatoes are baked with spinach and a creamy sauce seasoned with Cajun spices, resulting in a deliciously comforting dinner.

Ingredients
- 8 baby potatoes
- 2 fillets of skinless salmon
- 4 cups spinach
- 3/4 cup lactose free cream or coconut cream
- 2 tsp The Friendly Food Co. For Every O’Cajun seasoning
- Juice from ½ lemon to serve
Method
- Preheat the oven to 180°C fan bake.
- Bring a medium pot of salted water to boil. Add the potatoes and boil for 25-30 minutes until tender. Once the potatoes are cooked, drain and set aside.
- To a medium sized baking dish add the spinach, layer on the salmon fillets and add the boiled baby potatoes. Season evenly with Cajun seasoning and evenly pour over the cream. Bake for 8 – 10 minutes until the salmon is cooked.
- Serve the cajun salmon, spinach and potato bake with a squeeze of lemon juice.
