Crispy, golden fritters packed with courgette, carrot, and corn, lifted with our Cajun spice mix. Perfect as a snack, side, or light meal that’s bursting with flavour and FODMAP friendly.

Ingredients
- 2 courgettes, grated
- 2 carrots, grated
- 1 cup corn kernals
- 2 Tbsp The Friendly Food Co. For Every O'Cajun seasoning
- 1 cup parmesan cheese, finely grated
- Zest of 1 lemon
- 3-5 Tbsp basil, roughly chopped
- 2 spring onions, green tips only*, finely sliced
- Salt and pepper to taste
- ½ cup gluten free flour
- 1 tsp baking powder
- 3 free-range eggs
- 3 Tbsp extra virgin olive oil
Method
- Spread the courgettes and carrots between two layers of double stacked paper towels. Press firmly to remove as much water as possible from the vegetables. Repeat until most of the moisture is removed.
- In a large bowl combine the courgettes, carrots, corn, Cajun seasoning, parmesan, lemon zest, basil, spring onions and season with salt & pepper to taste.
- Stir in flour and baking powder until all the vegetables are evenly coated. Stir in eggs until well combined.
- In a large fry pan, heat olive oil over medium-high heat.
- Using a 1/4 cup measuring cup, scoop a few fritters into the pan being careful not to crowd them. Cook for 2-3 minutes until the bottom begins to brown, then flip and cook for 2-3 more until both sides are golden brown.
- Drain on paper towels to absorb excess oil and enjoy!
* Tip: Green tips of a spring onion are low FODMAP, whereas the white parts of a spring onion are high FODMAP.
