Low FODMAP Spiced Carrot Fritters with Herby Yoghurt Dressing

These Low FODMAP Spiced Carrot Fritters are a delicious way to make veggies the star of your plate. The warm curry spices pair beautifully with the natural sweetness of carrot, and the herby yoghurt dressing adds a refreshing balance. Quick to whip up and versatile, they’re perfect served as a light meal or side.

Ingredients:

Fritters:

  • 2 large carrots, grated 
  • ¼ cup spring onion green tips, finely chopped
  • ¼ cup fresh coriander, finely chopped
  • ¼ cup fresh parsley, finely chopped
  • 1 ½ cup gluten free all purpose flour
  • 2 tsp baking powder
  • 3 heaped tsp The Friendly Food Co. Butter Me Up spice mix 
  • Zest of 1 lime 
  • 2 large eggs
  • 8 Tbsp water
  • 1/4 tsp salt
  • Pepper to season
  • Rice bran oil for frying 


Herby Yoghut Dressing:

  • ½ cup lactose free yoghurt
  • ⅛ cup fresh coriander, finely chopped
  • ⅛ cup fresh parsley, finely chopped 
  • Juice of 1 lime 
  • Zest of 1 lime 
  • Salt and pepper to taste 


Instructions:

  1. Add the grated carrot, spring onion, fresh coriander and parsley to a large mixing bowl and stir to combine. Add the gluten free flour, baking powder, Butter Me Up spice mix, lime zest, eggs, water, salt and black pepper. Mix until well combined. The mixture should be thick and sticky. Set aside in the fridge until you are ready to fry the fritters. 
  2. Make the yoghurt dressing. Mix the yoghurt, chopped herbs, lime juice and zest in a small bowl. Season with black pepper. Place the dressing aside in the fridge until serving.
  3. To make the fritters scoop the fritter mixture using a 1/4 cup measuring cup and gently shape the mixture into fritters. Repeat the process until all the batter is used. You should get 8-12 fritters per batch.
  4. Place a large non-stick frypan over medium heat. Once hot, add enough oil to cover the bottom of the pan
  5. Place the fritters into the pan and lightly press with a spatula to flatten. Fry for 3-4 minutes, then flip and cook for a further 2 minutes until the fritters are lightly golden and cooked through. Remove from the pan and place on a paper towel lined plate. You may have to fry the fritters in 2-3 batches depending on the size of your pan.
  6. Serve the fritters warm with a dollop of herby yoghurt dressing.
