High Protein Low FODMAP Cajun Halloumi & Smashed Avocado Toast

This high protein Low FODMAP Cajun Halloumi & Smashed Avocado Toast is a simple yet satisfying meal that’s perfect for breakfast or lunch. We've added cottage cheese for a protein boost that actually keeps you full. This meal also packs 7g of fibre to help keep you fuller for longer and your microbiome happy.

Cook time: 5 minutes

Ingredients:

  • 1 slice of spelt sourdough 
  • 35g halloumi, sliced 
  • ½ tsp The Friendly Food Co. For Every O'Cajun seasoning 
  • 3 Tbsp (60g) avocado 
  • 40g cottage cheese 
  • 1 tsp maple syrup 
  • 1 Tbsp spring onion (green tips only), finely sliced
  • Optional chilli flakes for those wanting an extra kick

Method: 

  1. Slice your haloumi and season each side with The Friendly Food Co. For Every O'Cajun seasoning.
  2. Toast your slice of sourdough.
  3. Heat a dash of oil in a pan and fry your halloumi for a couple of minutes each side, until golden. 
  4. Add your avocado and cottage cheese to a small bowl and mash together until well combined. Season with salt and pepper to taste. 
  5. Top your sourdough with the smashed avocado, halloumi, a drizzle of maple syrup, spring onion and optional chilli flakes.
