Low FODMAP Chicken Fajitas

These Low FODMAP Chicken Fajitas are an easy, flavour-packed dinner the whole family will love. Smoky Cajun roasted chicken, capsicum, and tomatoes on warm tortillas with creamy homemade guacamole, lettuce and cheese. Made using our garlic and onion replacement powders, this recipe delivers all the bold fajita flavour without the gut discomfort. Perfect for busy weeknights, family dinners, or a fun DIY taco night at home.

Ingredients

     Chicken Fajitas:

    To serve:

    • 8-12 mini tortilla wraps
    • Light sour cream (2 Tbsp per serve for low lactose option)
    • Lettuce, shredded
    • Cheese (e.g. edam), grated

    Method

          1. Preheat the oven to 180°C fan bake.
          2. Add the chicken, capsicum, tomatoes and olive oil to a bowl. 
          3. In a separate small bowl, combine the Cajun seasoning, onion replacement powder, garlic replacement powder and mix well to combine. Sprinkle the seasoning mix over the chicken and vegetables, along with the BBQ sauce. Mix well until the chicken and vegetables are evenly coated. 
          4. Spread the chicken and vegetable mixture in a singular layer on a lined baking tray and bake for 25-35 minutes, until the chicken is cooked through.
          5. Prepare the guacamole: add the avocado to a bowl and mash. Add the garlic replacement powder, lime juice, coriander and season to taste. Mix well. 
          6. Heat a pan on medium heat. Add the tortillas and cook for 1 minute on each side until slightly browned. 
          7. Assemble the fajitas: add the chicken fajita mix to a tortilla, top with shredded lettuce, guacamole, sour cream and grated cheese.
